Veg Chilli (Frozen)

Our veggie chilli is made by frying off diced mushrooms, red onions, celery, leeks, garlic & sun-dried tomatoes in the oil from the sun-dried tomato tin. We then add a bunch of herbs and spices- smoked paprika, oregano, ground coriander, ground cumin, rosemary, cayenne pepper, chipotle chilli flakes, smoked whole chilli peppers, onion powder and garlic powder. Finely diced red and yellow peppers and dried puy lentils are then added, before pouring in mushroom stock, vegetable stock and a tin of chopped tomatoes. We added three types of beans- black turtle beans, butter beans and red kidney beans- which had separately been soaked and cooked. The chilli was then seasoned with ground black peeper and sea salt and left to simmer for 2-3 hours, allowing the liquid to reduce and intensify in flavour. To finish the chiili we added some vinegar, hot sauce and some chopped jalapenos.
This chilli is great with rice, or on nachos - turn it into burritos or however you like it. We like a dollop of sour cream, your favourite hot
sauce, and maybe some fresh coriander.
