Veg Coconut Curry (Frozen)
We make our curry by caramelising onions, garlic, ginger, fermented chilli and spices. We then add in chopped tomatoes, coconut milk, spinach and chickpeas and left to simmer for a couple of hours.
Roasted pieces of butternut squash, broccoli and wild garlic are added to the sauce before finishing the curry with lime juice, coconut and coriander.
Best served with steamed rice.
