Scottish beef fillet wrapped in mushroom duxelles, duck liver parfait, prosicutto and a perfect puff pastry lattice. The Wellington will come with red wine sauce.

A classic pairing would be the Château Lamothe-Cissac from Bordeaux, which is an amazing Bordeaux that punches well above it’s weight (decant it for an hour or two to transform it) however if you are feeling indulgent this Christmas nothing would beat the Paul Hobbs Cabernet Sauvignon.
