Scottish sea trout from Loch etive, wrapped in a stuffing made of caramelised leeks, wilted spinach, lemon, chives, chervil and cream cheese, then rolled in puff pastry, glazed with egg yolk and topped with fennel seeds.
Served with a shellfish bisque.
