Directions

  1. In a large pan, fill 3\/4 of the way with water and bring to the boil
  2. Add a generous amount of table salt.
  3. Lightly blanch the leaves of wild garlic until vibrant green.
  4. Refresh in iced water.
  5. Squeeze out the leaves to remove excess water and leave to air dry in the fridge for half an hour.
  6. Lightly chop the toasted pine nuts.
  7. Add all the dry ingredients to a food processor.
  8. Pour over enough Olive oil to coat all the ingredients.
  9. Quickly pulse and stop the food processor until a coarse but incorporated texture is obtained.
  10. Season with Blackthorn Scottish sea salt and freshly cracked black pepper
  11. Add more olive oil to give the desired consistency
  12. Stir in the fresh lemon juice.
  13. Check the seasoning and ratios.
