- In a large pan, fill 3\/4 of the way with water and bring to the boil
- Add a generous amount of table salt.
- Lightly blanch the leaves of wild garlic until vibrant green.
- Refresh in iced water.
- Squeeze out the leaves to remove excess water and leave to air dry in the fridge for half an hour.
- Lightly chop the toasted pine nuts.
- Add all the dry ingredients to a food processor.
- Pour over enough Olive oil to coat all the ingredients.
- Quickly pulse and stop the food processor until a coarse but incorporated texture is obtained.
- Season with Blackthorn Scottish sea salt and freshly cracked black pepper
- Add more olive oil to give the desired consistency
- Stir in the fresh lemon juice.
- Check the seasoning and ratios.
